El Calado
Wine cellars are a significant part of the legacy associated with the wine culture in La Rioja. They are small caves dug in the subsoil, accessed by narrow stairs carved into the rock, with high humidity and constant temperature, used in the winemaking process to mature and age the wines. Practically all the wineries have their own, and it is common to use them for meals and informal gatherings where the traditional grilled lamb chops are enjoyed among friends.
Ancestral recipes revamped in which the product, the quality vegetables from the Riojan kitchen garden, and the magnificent meat from the local livestock farmers take precedence, all with a simpler preparation in which quality and flavor take precedence.
