In our region, Allegar means to clear the plate, eat up all your food and drink up all your drink. It also means to pile up, in this case, great memories and experiences around a table, with friends, with the family, with your partner. 

And that is what the Santa María Briones’ culinary offer is all about: enjoying food as it is made in La Rioja, meeting, celebrating, and relaxing with honest, local flavors made with top quality produce from the Riojan orchards and local producers. To treat the product with techniques that bring the best out of it and savor it in an idyllic setting where the hotel’s different eating areas acquire their own personality, providing an authentic and comprehensive gastronomic offer.

Chef Juan Cuesta

Behind this culinary experience is chef Juan Cuesta, native of Logroño with a long career in some of the best restaurants in this country. A course in Etxaurren’s El Portal in Ezcaray and from there to the kitchens of Marqués de Riscal and Las Rejas in Las Pedroñeras (Cuenca) with the great Manuel de la Osa.

He then went on to work at Martín Berasategui’s MB in Tenerife as part of the team that led the establishment to obtain its second Michelin star. A career that encompasses passionate, signature cuisine and the most refined technique spanning almost a decade, which he now puts at the service of what he considers an immersive and complete experience at Santa María Briones; a project conceived to lay bare the demanding palate, social instinct and sense of enjoyment of La Rioja’s people.

The soft and delicate light of the inner courtyard enters the large windows and illuminates a room that seems spacious and cozy at the same time, a perfect, quiet atmosphere in which to experience a symphony of flavors and textures. 

Honeyed and crispy lamb on sweet potato cream and panko breadcrumbs, cod in slices on apple reineta, tomato and honey mustard vinaigrette, blanched green beans, crunchy careta, and potatoes are some of the dishes that parade through the dining room accompanied by a selection of the best wines of La Rioja. Cuisine true to the region and a refined technique to awaken your taste buds to the flavors of La Rioja.

El reservado

Restaurante Allegar reservado

Located in what was the establishment’s old wine press, the dim light that enters through its old mouth gives it a very singular atmosphere. El reservado is directly accessible from the dining room of our Allegar restaurant and offers that extra privacy perfect for group lunches.

Calado

Wine cellars are a significant part of the legacy associated with the wine culture in La Rioja. They are small caves dug in the subsoil, accessed by narrow stairs carved into the rock, with high humidity and constant temperature, used in the winemaking process to mature and age the wines. Practically all the wineries have their own, and it is common to use them for meals and informal gatherings where the traditional grilled lamb chops are enjoyed among friends.

Our wine cellar is a place to meet, to share, to talk—a place to celebrate life and friendship and where to enjoy a typical menu of Riojan products. Ancestral recipes revamped in which the product, the quality vegetables from the Riojan kitchen garden, and the magnificent meat from the local livestock farmers take precedence, all with a simpler preparation in which quality and flavor take precedence.

La Habladilla

For meetings and group meals.

La Habladilla

Habladilla is a typical word from the Calahorra area that means chat or conversation. And the reserved space above the Wine Cellar is the perfect place to enjoy our cuisine and chat with some privacy. A space also equipped with a television and multimedia system for business meetings and stunning views over the vineyards and the Ebro River.
